Ingredients | Instructions |

| Step 1 Preheat oven to 350ºF. In a large bowl, combine the shredded chicken, salt and pepper, and enough sauce to cover the chicken. Mix together and taste. Season with more salt and pepper as needed. |
| Step 2 Microwave the tortillas on a plate for 15 seconds each to make them easily shapeable. |
| Step 3 Assemble the enchiladas by filling each tortilla with the shredded chicken mixture and shredded cheese. Roll the tortillas tightly to close and place in large baking dish seam side down. |
| Step 4 Pour the remaining enchilada sauce over the tortillas, and top with the remaining shredded cheese. Bake for 20 minutes and until the cheese is melted. |
| Step 5 Serve and enjoy! |
