Meatball Soup (Latvian Frikadeļu zupa)

You have to try this Latvian meatball soup! It is easy and delicious!

Ingredients

Instructions

  • 4 large carrots

Step 1 Peel and slice carrots. Peel and dice potatoes into 1 inch cubes.

  • 2 bay leaves

Step 2 In a bowl, combine ground beef, egg, breadcrumbs, and black pepper. Mix with your hand to combine ingredients. Once combined, use a teaspoon measuring spoon to scoop out mixture and roll it into small meatballs. Place the meatballs in a single layer on a plate and set aside.

  • 5 black peppercorns

Step 3 Place the oil, carrots, bay leaf, and peppercorn in a large pot. Cook for 3 minutes on medium heat, stirring often. Add vegetable broth and bring to a boil. Reduce the heat and simmer for 3 minutes.

  • 1 teaspoon olive oil

Step 4   Add diced potatoes, bring back up to a boil and cook for 3 minutes.

  • 8 cups vegetable broth (2 cartons)

Step 5    Add the meatballs to the pot and simmer on low heat for about 15-20 minutes, until vegetables and meatballs have cooked through.

  • 4 potatoes

Step 6    To plate, scoop the soup into bowls and top with a scoop of sour cream and diced pickles. Enjoy!
